- In a medium mixing bowl, combine 1 cup of flaked almonds and 1 cup of unsweetened shredded coconut. Stir them gently until evenly mixed.
- In a medium saucepan over low heat, melt together ½ cup of peanut butter, ¼ cup of butter, ½ cup of cocoa powder, and ½ cup of stevia or monk fruit sweetener for about 3-5 minutes until smooth.
- Remove the saucepan from the heat and pour the wet mixture over the dry ingredient mix. Gently fold to combine.
- Prepare a muffin tin or place cupcake liners on a baking sheet. Spoon the mixture into the liners and make slight indentations in the center.
- Transfer to the fridge and chill for at least 2 hours or until firm.
- Once set, remove them from the fridge and gently peel off the cupcake liners. Arrange on a platter and serve.
