- Preheat your oven to 325°F (165°C). Place the bone-in smoked ham on a sturdy roasting pan, cut side down. Score the surface in a diamond pattern.
- In a medium bowl, mix honey, Dijon mustard, and brown sugar. Stir in apple cider vinegar, ground cinnamon, and black pepper until well blended.
- Brush the glaze over the scored surface of the ham and reserve some for later. Cover loosely with aluminum foil and place in the oven for about 1 hour.
