Step-by-Step Instructions
  1. Preheat your oven to 325°F (165°C). Place the bone-in smoked ham on a sturdy roasting pan, cut side down. Score the surface in a diamond pattern.
  2. In a medium bowl, mix honey, Dijon mustard, and brown sugar. Stir in apple cider vinegar, ground cinnamon, and black pepper until well blended.
  3. Brush the glaze over the scored surface of the ham and reserve some for later. Cover loosely with aluminum foil and place in the oven for about 1 hour.
  4. After the first hour, remove the foil and baste the ham with reserved glaze. Increase oven temperature to 400°F (200°C) and roast for an additional 30 to 40 minutes while basting every 15 minutes.
  5. Check internal temperature with a meat thermometer; it should reach at least 140°F (60°C), aiming for 160°F (71°C) for optimal flavor.
  6. Remove the ham from the oven and let it rest for 15 minutes before slicing and serving.
