Peach Filling
  • 4 cups Fresh Peaches peeled, pitted, and sliced
  • 1 cup Organic Brown Sugar or coconut sugar
  • 1/2 cup Organic Sugar or pure maple syrup
  • 2 tablespoons Lemon Juice or lime juice
  • 3 tablespoons Corn Starch or arrowroot starch
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
Topping
  • 1 cup All-Purpose Flour or gluten-free flour blend
  • 1/2 cup Earth Balance® Butter or coconut oil
  • 1/4 cup Boiling Water or warm milk
  • 2 tablespoons Additional Sugar for topping
  • 1 teaspoon Cinnamon for topping

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel, pit, and slice fresh peaches into ¼-1/2 inch pieces and mix with brown sugar, organic sugar, cinnamon, corn starch, lemon juice, and nutmeg.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
Topping
  1. In a bowl, whisk together flour, organic sugar, brown sugar, baking powder, and salt.
  2. Cut in the Earth Balance® butter until it resembles coarse crumbs.
  3. Gradually stir in boiling water until smooth.
Assembly and Baking
  1. Spread topping mixture over pre-baked peaches.
  2. Sprinkle the additional sugar and cinnamon over the topping.
  3. Return to oven and bake for an additional 35 minutes.
  4. Allow to cool slightly before serving.
