Preparation
- Preheat your oven to 425°F (220°C).
- Peel, pit, and slice fresh peaches into ¼-1/2 inch pieces and mix with brown sugar, organic sugar, cinnamon, corn starch, lemon juice, and nutmeg.
- Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
Topping
- In a bowl, whisk together flour, organic sugar, brown sugar, baking powder, and salt.
- Cut in the Earth Balance® butter until it resembles coarse crumbs.
- Gradually stir in boiling water until smooth.
Assembly and Baking
- Spread topping mixture over pre-baked peaches.
- Sprinkle the additional sugar and cinnamon over the topping.
- Return to oven and bake for an additional 35 minutes.
- Allow to cool slightly before serving.
