Step‑by‑Step Instructions
- Preheat your oven to 200°C (400°F) and prepare a foil-lined baking sheet.
- In a skillet over medium heat, add olive oil and sauté the onion and garlic until soft, about 5-7 minutes. Allow cooling slightly.
- In a large bowl, combine ground chicken, the cooled onion and garlic, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt. Mix gently until just combined.
- Shape two-thirds of the mixture into a loaf on the baking sheet. Make a well in the center, tuck in mozzarella sticks, and cover with remaining mixture.
- Spread marinara sauce over the top, ensuring it is evenly covered. Bake for approximately 45 minutes.
- Mix panko, extra Parmesan, melted butter, and parsley for the topping. After 45 minutes, sprinkle it over the meatloaf.
- Return the meatloaf to the oven and bake for an additional 15 to 20 minutes until the topping is golden brown.
- Let the meatloaf rest for about 10 minutes before slicing.

Notes
For best results, cool sautéed ingredients before mixing and avoid overmixing the meatloaf for a delicate texture.
