  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Paprika smoked paprika recommended
  • to taste Salt and Pepper
For the Enchiladas
  • 8 inch Flour Tortillas can substitute with corn tortillas for gluten-free
  • 2 cups Enchilada Sauce store-bought or homemade
  • 2 cups Shredded Cheddar Cheese or Mexican cheese blend
Optional Toppings
  • 1 cup Sour Cream
  • 1/4 cup Fresh Cilantro chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Brown the Ground Beef in a skillet over medium heat for 5–7 minutes.
  3. Sauté the onion for 3–4 minutes until translucent.
  4. Add garlic and spices, cooking for 1–2 minutes.
  5. Assemble the enchiladas with about ¼ cup of filling per tortilla.
  6. Pour enchilada sauce over the assembled tortillas and cover with cheese.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes.
  8. Let cool slightly, then serve garnished with sour cream and cilantro.
