  2. While the apple filling cools, warm 8 flour tortillas in a microwave for about 30 seconds, just until pliable. Keep them covered with a clean kitchen towel to retain warmth and moisture.
  3. Take one warmed tortilla and spoon a generous amount of the apple filling towards one side, then sprinkle with optional chopped pecans or walnuts if desired. Carefully roll the tortilla tightly.
  4. In a small bowl, mix together ½ cup brown sugar, ½ cup water, and 1 teaspoon vanilla extract. Pour this mixture evenly over the assembled enchiladas.
