Step-by-Step Instructions for French Style Hot Chocolate
  1. In a medium saucepan, gently heat 2 cups of milk over medium heat until steaming but not boiling, about 5 minutes. Whisk in 1/4 cup of high-quality cocoa powder and 1/4 cup of superfine sugar until smooth and fully combined.
  2. In a clean, dry mixing bowl, whip 4 room-temperature egg whites on medium speed until soft peaks form, approximately 2–3 minutes. Gradually add 1/2 cup of superfine sugar and 1/4 teaspoon of cream of tartar, continuing to whip for another 3–4 minutes until the meringue is glossy with stiff peaks.
  3. Pour the prepared French Style Hot Chocolate into serving bowls or cups, filling them about three-quarters full. Then, using a large spoon or a piping bag, dollop or pipe generous amounts of the freshly made meringue on top.
  4. Preheat your broiler on high. Place the meringue-covered hot chocolate cups on a baking sheet and broil for about 1–2 minutes, watching closely to prevent burning.
  5. Allow the cups to cool slightly for about 2 minutes. Serve immediately with a sprinkle of grated chocolate or a dash of cinnamon.
