Step-by-Step Instructions for French Style Hot Chocolate
- In a medium saucepan, gently heat 2 cups of milk over medium heat until steaming but not boiling, about 5 minutes. Whisk in 1/4 cup of high-quality cocoa powder and 1/4 cup of superfine sugar until smooth and fully combined.
- In a clean, dry mixing bowl, whip 4 room-temperature egg whites on medium speed until soft peaks form, approximately 2–3 minutes. Gradually add 1/2 cup of superfine sugar and 1/4 teaspoon of cream of tartar, continuing to whip for another 3–4 minutes until the meringue is glossy with stiff peaks.
- Pour the prepared French Style Hot Chocolate into serving bowls or cups, filling them about three-quarters full. Then, using a large spoon or a piping bag, dollop or pipe generous amounts of the freshly made meringue on top.
- Preheat your broiler on high. Place the meringue-covered hot chocolate cups on a baking sheet and broil for about 1–2 minutes, watching closely to prevent burning.
- Allow the cups to cool slightly for about 2 minutes. Serve immediately with a sprinkle of grated chocolate or a dash of cinnamon.
