Baking Instructions
- Preheat your oven to 350°F (175°C). Prepare a muffin tin with cupcake liners.
- In a mixing bowl, whisk together all-purpose flour, cocoa powder, baking powder, and granulated sugar.
- In another bowl, combine eggs, milk, and vegetable oil, whisking until smooth.
- Pour the wet ingredients into the dry mixture and fold until just combined.
- Fill each cupcake liner about two-thirds full and bake for 18-20 minutes.
- Allow cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- Whip together mascarpone cheese and espresso until light and fluffy.
- Hollow out a small portion from the center of each cupcake and fill with the mascarpone mixture.
- Sift cocoa powder over the tops of the filled cupcakes for dusting.
