Step-by-Step Instructions
  1. Season the chicken breast with salt and pepper. Whisk together honey, lime juice, lime zest, and minced garlic in a bowl. Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes per side, brushing with glaze in the last 2 minutes. Let it rest before slicing.
  2. In a large bowl, mix cooked rice with chopped cilantro and a splash of lime juice. Season with a pinch of salt and toss until well combined.
  3. Slice the ripe avocados in half, remove the pits, and scoop the flesh into a bowl. Toss with lime juice and season with salt and pepper.
  4. Assemble the stack using a ring mold. Spoon cilantro-lime rice as the base, followed by avocado slices, and top with sliced honey-lime chicken. Remove the mold carefully.
  5. Drizzle remaining honey-lime glaze around the plate and garnish with extra cilantro for an upscale presentation.
