- In a large mixing bowl, combine warm water, brown sugar, and yeast. Let sit for about 5 minutes until frothy.
- Stir in melted butter and salt. Gradually add flour, mixing until a soft, slightly sticky dough forms.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour.
- Punch down the dough and divide it into 8-10 equal pieces. Roll each piece into a smooth ball.
- In a large pot, bring water to a boil and add baking soda. Prepare the boiling bath.
- Boil each bun for 30 seconds on each side. Lift with a slotted spoon and place on a parchment-lined sheet.
- Preheat the oven to 400°F (200°C). Brush the boiled buns with egg, score the tops, and sprinkle with salt.
- Bake for 18-22 minutes until golden brown, then cool slightly before serving.
