  • 2 teaspoons Yeast (Instant or Active Dry)
  • 4 cups Bread Flour
  • 3 tablespoons Brown Sugar
  • 1 teaspoon Salt

  • 1 egg white Egg White For egg wash

  • 1/4 cup Butter (melted)
  • 1/2 cup Brown Sugar
  • 1 tablespoon Ground Cinnamon
  • 1/2 cup All-Purpose Flour

Step-by-Step Instructions
  1. In a stand mixer, combine 1 cup of warm water and 2 teaspoons of yeast. Allow it to sit for about 5 minutes until foamy.
  2. Add 4 cups of bread flour, 3 tablespoons of brown sugar, and 1 teaspoon of salt. Mix on low speed until combined, then increase to medium until a sticky dough forms.
  3. Transfer the dough onto a lightly floured surface and knead by hand for 6-8 minutes until smooth and elastic.
  4. Place the kneaded dough into a greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.
  5. Mix the melted butter, 1/2 cup of brown sugar, 1 tablespoon of ground cinnamon, and 1/2 cup of all-purpose flour for the topping. Set aside.
  6. Once risen, punch down the dough, divide into 12 pieces, shape each into a ball, and make a hole in the center.
  7. Let the shaped bagels rest covered for about 10 minutes.
  8. Boil about 3 quarts of water with 2 tablespoons of honey, then boil each bagel for 45 seconds on each side.
  9. Preheat the oven to 425°F, place boiled bagels on greased sheets, brush with the egg wash, sprinkle topping, and bake for 20-25 minutes.
  10. Allow bagels to cool on wire racks before serving.
