- In a stand mixer, combine 1 cup of warm water and 2 teaspoons of yeast. Allow it to sit for about 5 minutes until foamy.
- Add 4 cups of bread flour, 3 tablespoons of brown sugar, and 1 teaspoon of salt. Mix on low speed until combined, then increase to medium until a sticky dough forms.
- Transfer the dough onto a lightly floured surface and knead by hand for 6-8 minutes until smooth and elastic.
- Place the kneaded dough into a greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.
- Mix the melted butter, 1/2 cup of brown sugar, 1 tablespoon of ground cinnamon, and 1/2 cup of all-purpose flour for the topping. Set aside.
- Once risen, punch down the dough, divide into 12 pieces, shape each into a ball, and make a hole in the center.
- Let the shaped bagels rest covered for about 10 minutes.
- Boil about 3 quarts of water with 2 tablespoons of honey, then boil each bagel for 45 seconds on each side.
- Preheat the oven to 425°F, place boiled bagels on greased sheets, brush with the egg wash, sprinkle topping, and bake for 20-25 minutes.
