Gradually add white wine until a non-sticky dough forms. Knead for about 5 minutes, wrap in plastic wrap, and chill for at least 1 hour.
  2. Roll and Cut Dough: Dust your work surface with flour and roll out the dough to 1/8-inch thickness. Cut circles about 4 inches in diameter. Gather scraps, reroll, and cut more circles.
  3. Shape and Fry Shells: Preheat oil to 180°C (350°F). Wrap dough around cannoli tubes, sealing with egg white. Fry tubes for 2-3 minutes until golden brown. Remove, drain, and let cool.
  4. Make Filling: Pass ricotta through a fine sieve into a bowl. Mix in confectioner’s sugar and optional flavoring until creamy. Fold in mini chocolate chips or candied fruit. Chill for at least 1 hour.
