For the Seasoning

  • 4 links Smoked Sausage (Rookworst) can substitute with kielbasa or omit for vegetarian

Step-by-Step Instructions
  1. Prepare Potatoes: Peel and cut the waxy potatoes into 1-inch cubes. Place in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Reduce heat and cook for about 20 minutes until fork-tender. Drain and set aside.
  2. Cook Kale Mixture: Heat 2 tablespoons of butter or olive oil in a skillet over medium heat. Add chopped shallots and minced garlic, sautéing for about 2 minutes. Stir in chopped curly kale with ¼ cup of water, covering the skillet for about 5-7 minutes until tender.
  3. Mash Potatoes: In the same pot, combine drained potatoes with the sautéed kale mixture, pour in ¼ cup of milk, and add 2 tablespoons of butter. Season with salt, pepper, and a dash of nutmeg, mashing until smooth but slightly chunky.
  4. Prepare Sausage: Cook the smoked sausage using your preferred method until heated through and golden, about 5-6 minutes on each side.
  5. Serve: Scoop portions onto plates, top with slices of the hot sausage, and drizzle with olive oil. Enjoy your comforting Stamppot!
