Method
 

Cooking Instructions
  1. In a mixing bowl, whisk together coconut milk, soy sauce, fresh ginger, minced garlic, and lime juice until smooth. Set aside.
  2. Cut chicken breast into bite-sized pieces. Marinate the chicken in the marinade for at least 30 minutes or overnight.
  3. Preheat your grill or grill pan to medium heat, approximately 350°F to 400°F.
  4. Thread marinated chicken pieces onto skewers, leaving space between each piece.
  5. Grill skewers for approximately 10-12 minutes, turning occasionally, until chicken is opaque and charred.
  6. Remove from grill and let rest for 3-5 minutes before serving.
