Ingredients
  

For the Crostini
  • 1 pound Steak (sirloin or ribeye)
  • 1 pint Cherry Tomatoes Select the ripest ones
  • 8 ounces Mozzarella Pearls Fresh mozzarella
  • 1 cup Basil Chiffonade-cut
  • ½ tablespoon Olive Oil Extra virgin
  • 1 teaspoon Dried Oregano
  • 1 loaf Rustic Bread Sliced thickly
  • to taste Kosher Salt
  • to taste Black Pepper
  • ¼ cup Chopped Italian Parsley Optional garnish
Optional Toppings
  • 2 cups Arugula
  • 1 medium Avocado Sliced
  • 4 ounces Feta or Goat Cheese Optional
  • 2 tablespoons Balsamic Glaze For drizzling

Method
 

Preparation
  1. In a mixing bowl, combine quartered cherry tomatoes with chiffonade-cut basil, ½ tablespoon of olive oil, dried oregano, and mozzarella pearls. Gently toss to ensure even coating. Set aside.
  2. Preheat the grill to medium-high, around 375°F, ensuring the grates are clean and oiled.
  3. Grill the seasoned steak for about 4–6 minutes per side until desired doneness. Let it rest for 5 minutes.
  4. Slice rustic bread into ¾”-1” thick pieces. Brush with olive oil and grill oil-side down for 1–2 minutes until golden brown.
  5. Assemble the crostini by topping each slice of grilled bread with the tomato mixture and cubed steak. Season with salt and pepper to taste.
  6. Sprinkle chopped parsley over each crostini before serving for garnish.
