- Preheat the grill to medium-high heat, around 400°F (200°C).
- Toss the shrimp with salt and Cajun seasoning. Let sit for 5 minutes.
- Grill the shrimp for 2-3 minutes on each side until opaque.
- Lay out tortillas and add a handful of romaine lettuce to each.
- Layer grilled shrimp over the lettuce and drizzle Caesar dressing.
- Sprinkle Parmesan cheese on top. Add croutons or bacon bits if desired.
- Roll the wraps tightly and slice in half diagonally.
