- In a medium mixing bowl, combine rolled oats, brown sugar, ground cinnamon, melted butter, and all-purpose flour. Mix well until the ingredients are evenly coated and crumbly. Spread the mixture on a baking sheet lined with parchment paper and place it under a broiler set to low for 3-4 minutes.
- While your oat crumble cools, preheat your grill to medium-high heat, around 400°F (204°C). Prepare your peaches by halving them and removing the pits.
- Brush the halved peaches lightly with olive oil to prevent sticking and to enhance their flavor. Place the peach halves on the grill cut side down and grill for 3-4 minutes. Flip them over carefully and grill the other side for another 3-4 minutes until tender.
- Once your peaches are perfectly grilled, take them off the heat. Drizzle each warm peach half with honey or maple syrup.
- To serve, place the warm peach halves on a plate, sprinkle the cool oat crumble over the top, and add a scoop of vanilla ice cream.
