Method
 

Preparation
  1. Preheat your BBQ grill to 400°F (200°C) or heat a grill pan over high heat.
  2. In a mixing bowl, combine the yellow peach quarters, 1 tablespoon of olive oil, and 1 teaspoon of sea salt.
  3. Place the peach slices directly onto the hot grill, grill for 2-3 minutes on each side.
  4. Prepare your serving platter by layering a bed of mixed greens.
  5. Add the sliced Roma tomatoes to the platter, distributing them evenly among the greens.
  6. In a small bowl, whisk together the remaining olive oil, a pinch of salt, and the fresh lemon juice.
  7. Add your choice of optional toppings, such as microgreens or feta cheese.
