Preparation
- In a medium bowl, combine all marinade ingredients and whisk well.
- Place chicken in a zippered bag, add 3 tablespoons of marinade, seal and refrigerate for 2 to 4 hours.
- Wash and cut vegetables into uniform pieces.
- Pre-soak wooden skewers in water for at least 30 minutes.
- Thread chicken and vegetables onto soaked skewers, alternating them.
- Preheat grill to medium-high, around 400°F (200°C), and grill skewers for 10 to 15 minutes.
- Remove from grill, tent with foil, and rest for 5 minutes before serving.
