Ingredients
  

Marinade
  • 0.5 cup smoky barbecue sauce or any favorite BBQ sauce
  • 0.25 cup soy sauce opt for low-sodium for a healthier version
  • 0.25 cup honey or maple syrup for a vegan alternative
  • 2 tablespoons extra virgin olive oil any neutral oil can work
  • 1 tablespoon fresh ginger grated, recommended over powder
  • 1 tablespoon sesame oil can be omitted or replaced
  • 1 tablespoon sriracha sauce adjust to taste for spice level
  • 2 cloves garlic minced, or use garlic powder
Skewers
  • 1 pound boneless skinless chicken breast cut into bite-sized pieces
  • 1 medium zucchini cut into large chunks
  • 1 medium red onion cut into large chunks
  • 1 medium bell pepper any color, cut into large chunks

Method
 

Preparation
  1. In a medium bowl, combine all marinade ingredients and whisk well.
  2. Place chicken in a zippered bag, add 3 tablespoons of marinade, seal and refrigerate for 2 to 4 hours.
  3. Wash and cut vegetables into uniform pieces.
  4. Pre-soak wooden skewers in water for at least 30 minutes.
  5. Thread chicken and vegetables onto soaked skewers, alternating them.
  6. Preheat grill to medium-high, around 400°F (200°C), and grill skewers for 10 to 15 minutes.
  7. Remove from grill, tent with foil, and rest for 5 minutes before serving.
