Step-by-Step Instructions for Greek Chicken Souvlaki
  1. In a large bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, salt, and pepper. Coat the chicken pieces with the marinade and refrigerate for at least 30 minutes.
  2. While the chicken marinates, grate the cucumber, squeeze out excess moisture, and combine it with Greek yogurt, minced garlic, lemon juice, fresh dill, and a pinch of salt. Stir well and refrigerate.
  3. Thread the marinated chicken onto skewers, ensuring space between pieces. Preheat the grill to medium heat and brush the skewers with olive oil.
  4. Grill the chicken skewers for 10–12 minutes, turning occasionally until they reach an internal temperature of 165°F.
  5. Serve the grilled chicken with tzatziki sauce, warm pita, sliced tomatoes, and red onions. Garnish with dill or lemon wedges.
