Ingredients
  

Filling
  • 1 lb Ground Beef You can substitute with ground chicken or turkey.
  • 1 medium Onion Shallots can be used for a milder flavor.
  • 1 tbsp Olive Oil Avocado oil makes a great alternative.
  • 1 cup Bell Pepper Any variety is great, feel free to mix them.
  • 2 cups Spinach Kale works well too if you're looking for a switch.
Wrapping
  • 6 pieces Siete Almond Flour Tortillas Check for gluten-free labels if using others.
Sauce and Toppings
  • 2 cups Gluten-Free Enchilada Sauce Homemaking is best to avoid additives or preservatives.
  • 1 cup Shredded Mexican Cheese Omit for a dairy-free option.
  • to taste Pico de Gallo and/or Guacamole Use as much as your heart desires!
Seasoning
  • 1 tbsp Spices (Cumin, Smoked Paprika, Taco Seasoning) Ensure they're gluten-free.

Method
 

Directions
  1. Preheat your oven to 375°F (190°C). Gather your cookware including a large skillet and a baking dish.
  2. In your skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook for about 6-8 minutes, until browned. Remove and set aside.
  3. Add the remaining olive oil to the skillet. Sauté diced onion, bell pepper, and spinach for about 5-7 minutes until softened.
  4. Incorporate the cooked ground beef back into the skillet, sprinkle in your spices, and drizzle with enchilada sauce. Cook for another 2-3 minutes.
  5. Lay each Siete almond flour tortilla flat. Spoon a portion of the beef and vegetable mixture onto each tortilla and sprinkle with shredded cheese. Roll up and place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the tortillas and add the rest of the shredded cheese on top.
  7. Bake in the preheated oven for 30 minutes until the cheese layer is bubbly and lightly golden.
  8. Let the enchiladas cool briefly before serving. Top with fresh pico de gallo and guacamole.

Notes

Warm the Siete almond flour tortillas slightly before filling to prevent cracking. Don't overstuff to make rolling easier. Always verify that your enchilada sauce and spices are gluten-free. These enchiladas can be assembled ahead of time and stored in the fridge for up to 24 hours before baking.
