Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of butter in a large pan over medium heat and sauté the shrimp, scallops, and white fish for 3-4 minutes.
  3. Add 1 tablespoon of butter to the same pan and sauté the minced garlic for about 1 minute, then add 0.5 cup of white wine and reduce by half for 2-3 minutes.
  4. Stir in 1 cup of heavy cream, bring to a simmer and add melted Parmesan and Gruyère cheeses until smooth.
  5. Layer the sautéed seafood in ramekins or a baking dish, pour the creamy sauce over it evenly.
  6. Sprinkle grated Parmesan and Gruyère on top, add breadcrumbs if desired.
  7. Bake for 15-20 minutes until the top is golden brown and the sauce is bubbling.
  8. Let it rest, then garnish with fresh herbs and lemon zest before serving.
