Ingredients

For the Bread
  • 1 cup Brown Sugar Adds sweetness and caramelization; use light or dark based on preference.
  • 1/2 cup Butter Provides richness and moisture; can substitute margarine if needed.
  • 2 cans Refrigerated Flaky Buttermilk Biscuits The base for pull-apart fun; cut into smaller pieces for easy stuffing without unrolling.
For the Filling
  • 8 oz Cream Cheese Offers a creamy, tangy surprise; cut into cubes for easy stuffing.
  • 1/2 cup Chopped Walnuts Adds a delightful crunch; feel free to replace with pecans or almonds if preferred.
For the Sweet Glaze
  • 1/2 cup Sugar Sweetens up the filling; pairs well with the warmth of cinnamon.
  • 1 tbsp Ground Cinnamon Infuses warmth and spice; adjust based on your taste preference.

Equipment

  • microwave-safe bowl
  • 10-inch fluted tube pan

Method

Step‑by‑Step Instructions
  1. In a microwave-safe bowl, combine the brown sugar and butter. Heat in the microwave for about 1 minute, stirring halfway through until everything is dissolved and well combined.
  2. In a separate bowl, mix the sugar and ground cinnamon together until evenly blended.
  3. Take your refrigerated flaky buttermilk biscuits and cut each one into quarters. Flatten each piece into a 3-inch circle.
  4. Sprinkle about half a teaspoon of the cinnamon-sugar mixture in the center of each flattened biscuit. Place a cube of cream cheese on top, then fold the edges over the filling.
  5. Grease a 10-inch fluted tube pan generously to avoid sticking. Sprinkle half of the chopped walnuts at the bottom of the pan.
  6. Begin layering by placing half of the stuffed biscuits in the pan. Sprinkle half of the remaining cinnamon-sugar mixture and half of the butter glaze over the biscuits. Repeat this process.
  7. Preheat your oven to 350°F (175°C). Place the pan in the oven and bake the Gorilla Bread for 40 to 45 minutes.
  8. Once baked, carefully remove the pan from the oven and let it cool for about 5 minutes. Then, invert it to release the Gorilla Bread.
