Baking Instructions
- Preheat the oven to 200°C (390°F) and line baking sheets with parchment paper.
- Cream cold butter with light brown and granulated sugars for about 4 minutes until light and fluffy.
- Add eggs and vanilla extract, mixing on low speed until combined.
- In a separate bowl, whisk together all-purpose flour, cake flour, cornstarch, baking soda, and salt.
- Gradually add dry mixture to wet ingredients, mixing until just combined.
- Fold in chocolate chips, coconut, and caramel bits using a spatula.
- Portion out about 170g of dough for each cookie and place them on the baking sheets.
- Bake for 10 to 14 minutes or until edges are golden brown and centers are soft.
- Let cookies cool on the baking sheets for 15 minutes before transferring to a cooling rack.
