- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a medium saucepan, combine low-sodium chicken broth and unsalted butter. Bring to a gentle boil and stir in stuffing mix. Cover and let rest for 5 minutes.
- Melt remaining unsalted butter in a skillet and cook diced celery and onion for 4-5 minutes until softened.
- In a large bowl, combine sautéed celery and onion with shredded chicken, broccoli, and cream of chicken soup. Mix well.
- Transfer mixture to baking dish, sprinkle cheddar cheese on top, and layer prepared stuffing mix over it.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until topping is golden.
