Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) to ensure it's hot enough for roasting.
  2. Wash and chop your red bell pepper, zucchini, and red onion into 1-inch pieces. Arrange on a baking sheet.
  3. Drizzle olive oil over the vegetables, season with salt and pepper, and toss to coat. Roast for 20–25 minutes.
  4. Remove from the oven and let the vegetables cool completely.
  5. In a food processor, combine the cooled vegetables and cream cheese with remaining olive oil. Blend until smooth.
  6. Transfer to a serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes before serving.
