- In a medium mixing bowl, add the plain Greek yogurt, creamy peanut butter, honey or maple syrup, and vanilla extract. Mix until smooth and creamy, about 2-3 minutes.
- Taste the mixture and adjust sweetness with more honey or maple syrup if needed.
- Gently fold in half of the mini chocolate chips into the mixture.
- Line a baking sheet with parchment paper. Using a cookie scoop, drop spoonfuls of the mixture onto the sheet, forming rounded bites.
- Sprinkle the remaining mini chocolate chips over the bites and optionally add a pinch of sea salt.
- Place the baking sheet in the freezer for at least 2 hours, or until the bites are firmly set.
- Once frozen, let the bites sit at room temperature for about 2 minutes before serving.
