- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and mix well.
- Gradually add the flour, mixing on low speed until just combined.
- Fold in the Fruity Pebbles cereal until evenly distributed.
- Using a cookie scoop, drop mounds of dough onto the prepared baking sheets, spaced about 2 inches apart. Bake for 10-12 minutes.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack. Frost and decorate before serving.
