- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat until fluffy and light in color.
- Add the eggs one at a time, mixing well after each. Pour in the vanilla extract.
- Gradually incorporate the all-purpose flour into the wet mixture.
- Fold in the crushed Fruity Pebbles gently using a spatula.
- Scoop rounded dough balls onto the prepared baking sheets, spacing them about two inches apart. Bake for 10-12 minutes.
- Cool the cookies for about 5 minutes on the sheets before transferring to a wire rack.
- Frost each cookie and sprinkle additional Fruity Pebbles on top.
