Step-by-Step Instructions
  1. Preheat your oven to 425℉ (220℃) and grease your donut pan with coconut oil or non-stick cooking spray.
  2. Crush the Fruity Pebbles cereal into a coarse crumb and set aside.
  3. In a mixing bowl, whisk together granulated sugar, melted coconut oil, egg, almond milk, and vanilla extract until smooth.
  4. Mix in the all-purpose flour, crushed Fruity Pebbles, baking powder, baking soda, and salt until just combined.
  5. Fill each mold of the donut pan about ¾ full with the batter.
  6. Bake for 7-9 minutes until light golden, and a toothpick inserted comes out with moist crumbs.
  7. Cool the donuts in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Prepare the icing by whisking together powdered sugar, vanilla extract, almond milk, and optional lemon extract.
