Steps
- Cook the pasta in salted boiling water for 3-4 minutes until al dente. Drain, reserving some pasta water.
- Season shrimp with salt and crushed red pepper flakes. Let marinate.
- Heat olive oil in a skillet. Sauté shrimp for 2-3 minutes until pink and opaque.
- In the same skillet, add more olive oil and sauté asparagus, mushrooms, tomatoes, garlic, and green onions for 5 minutes.
- Add white wine and herbs, simmer for 2 minutes to meld flavors.
- Return shrimp to the skillet, mix well and warm through for 1 minute.
- Add the drained pasta, toss with shrimp and veggies. Use reserved pasta water if needed.
- Serve topped with Parmesan and lemon wedges on the side.
