Ingredients
  

For the Pasta
  • 8 oz Angel Hair Pasta Cooks quickly, ideal for fast meals
For the Shrimp
  • 1 lb Shrimp 16-20 per pound, peeled and deveined
  • 1 tsp Salt For seasoning
  • 1/2 tsp Crushed Red Pepper Flakes Adjust based on spice preference
For the Veggies
  • 2 tbsp Olive Oil For sautéing
  • 1 cup Asparagus Cut into bite-sized pieces
  • 1 cup Fresh Mushrooms Sliced
  • 1 cup Chopped Tomato Fresh or canned
  • 3 cloves Garlic Minced
  • 2 scallions Green Onions Sliced
For the Sauce
  • 1/2 cup White Wine Can substitute with chicken broth
  • 1 tbsp Fresh Basil Chopped
  • 1 tbsp Oregano Chopped
  • 1 tbsp Parsley Chopped
  • 1 tbsp Thyme Chopped
For the Finish
  • 1/2 cup Parmesan Cheese Grated
  • 1 lemon Lemon Wedges For serving

Method
 

Steps
  1. Cook the pasta in salted boiling water for 3-4 minutes until al dente. Drain, reserving some pasta water.
  2. Season shrimp with salt and crushed red pepper flakes. Let marinate.
  3. Heat olive oil in a skillet. Sauté shrimp for 2-3 minutes until pink and opaque.
  4. In the same skillet, add more olive oil and sauté asparagus, mushrooms, tomatoes, garlic, and green onions for 5 minutes.
  5. Add white wine and herbs, simmer for 2 minutes to meld flavors.
  6. Return shrimp to the skillet, mix well and warm through for 1 minute.
  7. Add the drained pasta, toss with shrimp and veggies. Use reserved pasta water if needed.
  8. Serve topped with Parmesan and lemon wedges on the side.
