Ingredients
  

For the Casserole
  • 1 lb Ground Beef opt for lean varieties
  • 2 tbsp Chili Powder or substitute with taco seasoning
  • 1 tsp Cumin
  • 1 tsp Garlic Powder fresh garlic is also great
  • 1 tsp Paprika use smoked for richer taste
  • to taste Salt & Black Pepper
  • 1/4 tsp Cayenne Pepper optional for spiciness
  • 2 cloves Minced Garlic fresh is best
  • 1 medium White Onion yellow onions are a good substitute
  • 1 cup Green Peppers can use red or yellow bell peppers
  • 2 medium Russet Potatoes or sweet potatoes for low-carb
  • 1 cup Salsa sugar-free for Whole30 compliance
  • 1 can Mild Green Chiles canned or fresh
  • 1/2 cup Sliced Black Olives canned
  • 1 can Diced Tomatoes canned or fresh
  • 2 Eggs (beaten) for binding

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef. Add the minced garlic and diced onion, cooking until fully cooked.
  3. Combine chopped green peppers, diced potatoes, salsa, green chiles, olives, and diced tomatoes in a large casserole dish.
  4. Add the cooked beef mixture to the vegetable medley, then stir in beaten eggs until fully combined.
  5. Cover the dish with foil and bake for 45 minutes to 1 hour until potatoes are tender.
  6. Let cool for a few minutes before serving and enjoy with toppings.
