Step-by-Step Instructions
  1. Finely chop ¼ of the English cucumber to use as a garnish later; set aside in a small bowl.
  2. Peel and chunk the remaining cucumber, then blend with the remaining base ingredients until smooth, about 1-2 minutes.
  3. Taste the blended gazpacho and adjust seasoning if necessary. Blend for an additional 30 seconds if needed.
  4. Transfer the blended gazpacho into an airtight container and refrigerate for at least 2 hours.
  5. Once chilled, stir the gazpacho, pour into bowls, and top with reserved cucumber, cherry tomatoes, and herbs.
