Marinating and Grilling
- In a mixing bowl, combine brown sugar, rum, and cinnamon until smooth. Add the pineapple wedges and let marinate for about 15 minutes.
- In a separate bowl, mix together minced garlic, chopped basil, lemon juice, olive oil, salt, and pepper.
- Coat the shrimp with the marinade and let rest for 15 minutes.
- Prepare rosemary skewers and alternate threading pineapple and shrimp.
- Preheat the grill, then grill the pineapple skewers for 3-5 minutes per side.
- Grill the shrimp skewers for about 2 minutes on each side.
- Serve warm on a platter with reserved marinade for dipping.
