Ingredients
  

Marinade
  • 1/4 cup Brown Sugar Can substitute with coconut sugar.
  • 1/4 cup Rum Use white or dark based on preference.
  • 1 tsp Cinnamon No direct substitutions, can reduce for milder flavor.
  • 2 cloves Garlic Use fresh garlic for the best taste.
  • 1/4 cup Basil Leaves Fresh is preferred.
  • 2 tbsp Lemon Juice Freshly squeezed is preferred.
  • 2 tbsp Olive Oil Can substitute with avocado oil.
Skewers
  • 1 lb Shrimp Must be peeled and deveined.
  • 4 sprigs Fresh Rosemary If unavailable, use soaked wooden skewers.
  • 1 cup Pineapple Fresh is best, canned can be used.

Method
 

Marinating and Grilling
  1. In a mixing bowl, combine brown sugar, rum, and cinnamon until smooth. Add the pineapple wedges and let marinate for about 15 minutes.
  2. In a separate bowl, mix together minced garlic, chopped basil, lemon juice, olive oil, salt, and pepper.
  3. Coat the shrimp with the marinade and let rest for 15 minutes.
  4. Prepare rosemary skewers and alternate threading pineapple and shrimp.
  5. Preheat the grill, then grill the pineapple skewers for 3-5 minutes per side.
  6. Grill the shrimp skewers for about 2 minutes on each side.
  7. Serve warm on a platter with reserved marinade for dipping.
