Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350ºF (175ºC).
  2. Blend half of the granulated sugar in a food processor until fine.
  3. Mix the remaining sugar with cake flour and salt in the food processor.
  4. Whip egg whites with warm water using an electric mixer until foamy.
  5. Add cream of tartar and gradually incorporate powdered sugar until medium peaks form.
  6. Fold the flour mixture into the whipped egg whites gently.
  7. Transfer the batter into an ungreased tube pan evenly.
  8. Bake for approximately 35 minutes until golden brown.
  9. Cool the cake upside down for 2-3 hours.
  10. Melt white chocolate with heavy cream in a saucepan for ganache.
  11. Mix in lemon zest and juice into the ganache and let cool.
  12. Drizzle the ganache over the cooled cake.
  13. Garnish with fresh berries and mint sprigs before serving.
