- Preheat your grill to medium-high heat, around 375–400°F (190–200°C).
- In a small bowl, combine olive oil, lemon juice, minced garlic, and chopped herbs. Whisk together until well-blended.
- Pat the cod fillets dry and season both sides with salt and pepper.
- Brush both sides of the seasoned fillets with the olive oil marinade.
- Place the marinated cod fillets on the preheated grill and cook for 4-5 minutes without moving.
- Flip the fillets carefully using a spatula and grill the second side for another 4-5 minutes until cooked through.
- Remove from the grill and serve with reserved marinade drizzled on top.
