Step‑by‑Step Instructions for Hummingbird Bread
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
  3. Add the eggs, canola oil, and vanilla extract to the dry ingredients, stirring gently.
  4. Fold in the crushed pineapple, bananas, coconut, and pecans without overmixing.
  5. Pour the batter into the prepared loaf pan and bake for 55–65 minutes.
  6. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
  7. Beat the cream cheese and butter until smooth, then mix in the powdered sugar.
  8. Frost the cooled bread and sprinkle with chopped pecans before serving.
