Ingredients
  

For the Roasted Cauliflower
  • 1 head Cauliflower cut into florets
  • 2 tablespoons Extra-Virgin Olive Oil
  • 1 teaspoon Kosher Salt
For the Teriyaki Sauce
  • 1/2 cup Water
  • 2 tablespoons Cornstarch can swap with arrowroot for gluten-free
  • 1/2 cup Tamari or Soy Sauce (lower-sodium)
  • 2 tablespoons Brown Sugar replace with maple syrup for refined sugar substitute
  • 2 cloves Minced Fresh Garlic
  • 2 tablespoons Hoisin Sauce
  • 1 tablespoon Rice Vinegar
For the Bowls
  • 2 cups Cooked Grains (Farro, Rice, or Quinoa) as the nutritious foundation
  • 1 cup Edamame (shelled, frozen) can substitute with chickpeas or lentils
  • 1 cup Shredded Red Cabbage shredded carrots work too!
  • 2 scallions Green Onion (sliced) for garnish
Optional Toppings
  • 2 tablespoons Toasted Sesame Seeds
  • 1 medium Avocado offers a creamy texture

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Toss the cauliflower florets with olive oil and kosher salt, then spread them on the baking sheet. Bake for about 30 minutes, tossing halfway through.
  3. In a small bowl, whisk together water and cornstarch for a slurry. In a saucepan, mix tamari/soy sauce, brown sugar, minced garlic, hoisin sauce, and rice vinegar over medium heat until the sugar dissolves, then add the cornstarch slurry until thickened.
  4. Brush half of the teriyaki sauce onto the roasted cauliflower and bake for an additional 10 minutes.
  5. Assemble your bowls by layering cooked grains, teriyaki cauliflower, edamame, and shredded cabbage. Drizzle any remaining sauce on top.
  6. Garnish each bowl with green onions and optional toppings like sesame seeds or avocado. Serve warm.
