Ingredients
  

For the Blackberry Syrup
  • 2 cups Fresh Blackberries Frozen can work in a pinch if fresh isn’t available.
  • 1 tbsp Grand Marnier Optional; adds depth to the syrup.
  • 2 tbsp Fresh Lemon Juice Provides brightness and acidity.
  • 1/2 cup Granulated Sugar Adjust according to the sweetness of blackberries.
For the Cream Layer
  • 1 tbsp Unflavored Gelatin Stabilizes the cream layer.
  • 2 tbsp Cold Water Hydrates the gelatin.
  • 1 cup Heavy Cream Swap for a lighter option if preferred.
  • 1/4 cup Powdered Sugar Sweetens the cream.
  • 1 tsp Vanilla Bean Paste/Extract Adds flavor.
  • 1 cup Plain Greek Yogurt Full-fat is recommended.
To Garnish
  • 4 leaves Mint Leaves Fresh flavor and pop of color.

Method
 

Prepare the Blackberry Syrup
  1. In a medium saucepan over medium heat, combine fresh blackberries, optional Grand Marnier, fresh lemon juice, and sugar. Cook until it begins to boil, stirring occasionally for about 2-3 minutes. Once boiling, reduce heat and let simmer for 8-10 minutes until thickened. Remove from heat and cool completely.
Dissolve Gelatin
  1. In a small bowl, sprinkle unflavored gelatin over cold water and let sit for about 5 minutes to bloom. Heat in microwave for 10-15 seconds until dissolved.
Whip the Cream
  1. In a large mixing bowl, use an electric mixer to whip heavy cream on medium speed until it thickens. Gradually add powdered sugar and vanilla, whipping until soft peaks form.
Incorporate Gelatin
  1. Gently pour the dissolved gelatin mixture into the whipped cream while mixing on low speed until combined.
Fold in Greek Yogurt
  1. Incorporate the plain Greek yogurt into the whipped cream mixture, gently folding until fully combined.
Assemble the Layers
  1. In clear glasses, layer the cooled blackberry syrup and creamy yogurt mixture. Start with syrup, followed by cream, and repeat.
Garnish and Chill
  1. Top with fresh blackberries and a mint leaf. Cover and refrigerate for at least 2 hours.
