Ingredients

For the Cake
  • 2 cups All-Purpose Flour Essential for structure; swap with cake flour for a lighter texture.
  • 2 teaspoons Baking Powder This leavening agent helps the cake rise beautifully.
  • 1 cup Granulated Sugar Sweetens the cake while keeping it moist.
  • 2 oz Salted Butter Adds richness; use unsalted for a milder taste.
  • 2 Eggs Bind and provide moisture.
  • 1.25 cups Low-Fat Greek Yogurt Contributes moisture and a slight tang.
  • 2 teaspoons Vanilla Extract Elevates flavor and sweetness.
  • 16 oz Blackberries Fresh is best for sweetness and tart flavor.
  • 1 tablespoon Flour For coating blackberries.

Equipment

  • 9x3-inch springform pan

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and line the bottom of a 9x3-inch springform pan with parchment paper.
  2. In a medium mixing bowl, whisk together 2 cups of all-purpose flour and 2 teaspoons of baking powder until combined.
  3. In a large mixing bowl, beat together 1 cup of granulated sugar, ¼ cup of melted salted butter, and 2 eggs until light and fluffy. Fold in 1 and ¼ cups of low-fat Greek yogurt and 2 teaspoons of vanilla extract.
  4. Gradually add the flour mixture to the wet ingredients, stirring gently until just combined, keeping the batter slightly lumpy.
  5. Toss 16 ounces of fresh blackberries with 1 tablespoon of flour and gently fold two-thirds into the batter.
  6. Transfer the batter to the springform pan, smoothing the top, and arrange the remaining blackberries on top.
  7. Bake in the preheated oven for 45-50 minutes, checking for doneness at 45 minutes.
  8. Let the cake cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving.
