Preparation
- Preheat the oven to 350°F (175°C) and line the bottom of a 9x3-inch springform pan with parchment paper.
- In a medium mixing bowl, whisk together 2 cups of all-purpose flour and 2 teaspoons of baking powder until combined.
- In a large mixing bowl, beat together 1 cup of granulated sugar, ¼ cup of melted salted butter, and 2 eggs until light and fluffy. Fold in 1 and ¼ cups of low-fat Greek yogurt and 2 teaspoons of vanilla extract.
- Gradually add the flour mixture to the wet ingredients, stirring gently until just combined, keeping the batter slightly lumpy.
- Toss 16 ounces of fresh blackberries with 1 tablespoon of flour and gently fold two-thirds into the batter.
- Transfer the batter to the springform pan, smoothing the top, and arrange the remaining blackberries on top.
- Bake in the preheated oven for 45-50 minutes, checking for doneness at 45 minutes.
- Let the cake cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar before serving.
