- In a large mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of fresh lemon juice, and 1 tablespoon of Dijon mustard. Whisk until smooth and creamy.
- Gently break apart 8 ounces of imitation crab meat into bite-sized chunks and fold into the creamy dressing.
- Add in 1/2 cup of finely diced celery, 1/4 cup of minced red onion, and 1/2 cup of corn kernels. Stir gently to combine.
- Sprinkle salt and pepper to taste, and optionally fold in 1 tablespoon of chopped fresh dill. Stir gently to blend.
- Cover the bowl and refrigerate for at least 30 minutes to chill.
