Method

Cookie Preparation
  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add in the eggs and vanilla extract, mixing until fully incorporated. Gradually blend in the all-purpose flour and baking powder until a smooth dough forms.
  2. Scoop the cookie dough and roll it into balls using a tablespoon. Place them on a parchment-lined baking sheet, spacing them about 2 inches apart. Gently flatten the tops with your fingers for even baking. Bake for 10-12 minutes or until the edges turn a light golden brown. Allow them to cool on a wire rack.
Snack Chow
  1. In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring in between until completely smooth, about 1-2 minutes. In a separate bowl, combine your chosen cereal with the melted chocolate and stir until each piece is evenly coated. Spread onto a parchment-lined tray, sprinkle with decorations, and let cool for about 15 minutes.
Brownie Bites
  1. Preheat your oven according to your brownie mix instructions. Fill mini muffin tins with the brownie batter, using about two-thirds of each cup. Bake for 10-15 minutes or until a toothpick inserted comes out clean. Allow the brownie bites to cool before transferring them to a wire rack.
Oreo Truffles
  1. Crush Oreo cookies into fine crumbs using a food processor. Combine the cookie crumbs with softened cream cheese until well blended. Roll into small balls roughly the size of a tablespoon and chill on a baking sheet lined with parchment paper for 30 minutes.
Dipped Pretzels
  1. Melt your choice of chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each pretzel rod halfway in the melted chocolate, letting excess drip off. Place on parchment paper and sprinkle with festive toppings while the chocolate is still wet. Let set at room temperature for 20-30 minutes.
Frosting Cookies
  1. Once the sugar cookies have cooled, combine powdered sugar, milk, and food coloring to create frosting. Spread generously on cookies and add sprinkles to make them extra festive!
Serving
  1. Arrange all your Easy St. Patrick's Day Treats on a colorful platter to present at your gathering. Mix and match cookies, brownie bites, truffles, Snack Chow, and dipped pretzels for a delightful display!
