  • 1 pound Fresh Salmon or canned salmon
  • 1/2 cup Japanese Mayonnaise or regular mayo with sugar and lime juice
  • 2 tablespoons Sriracha Sauce adjust to taste
For the Topping
  • 1 cup Shredded Cheese
For Garnish
  • 1/4 cup Nori Strips
  • 3 tablespoons Sliced Green Onions
  • 2 tablespoons Sesame Seeds

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Cook the sushi rice according to your rice cooker instructions or on the stovetop.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved and fold into the cooled rice.
  5. Place the salmon in a baking dish, drizzle with soy sauce and sesame oil, and bake for 12-15 minutes.
  6. Flake the baked salmon and mix with Japanese mayonnaise and sriracha.
  7. Spread the seasoned sushi rice in a greased 8x8 inch baking dish, then add the salmon mixture and cheese.
  8. Bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  9. Garnish with nori strips, green onions, and sesame seeds before serving.
