Preparation
  1. Brown the ground beef in a skillet over medium heat for 5-7 minutes until fully cooked, then drain excess fat.
  2. Transfer the browned beef into the slow cooker, add Velveeta cheese, Rotel tomatoes with juices, and taco seasoning. Stir until well combined.
  3. Cover and cook on HIGH for 1.5 to 2 hours, stirring after 1.5 hours to ensure even melting.
  4. While cooking, warm tortillas in a skillet for 30 seconds on each side and prepare any additional toppings.
  5. Once cooked, stir the filling and serve in warm tortillas, allowing guests to customize their tacos.
