Method
 

Step-by-Step Instructions
  1. Soak wooden skewers in water for at least 1 hour.
  2. Preheat your grill to 400°F (200°C).
  3. Rinse and pat dry shrimp, placing them in a large mixing bowl.
  4. Chop the red bell peppers, yellow squash, zucchini, and red onion into even-sized chunks.
  5. Mix Italian seasoning and garlic salt; sprinkle half over shrimp and half over vegetables.
  6. Drizzle olive oil over shrimp and vegetables; toss to coat evenly.
  7. Thread the seasoned shrimp and vegetables onto skewers, alternating as desired.
  8. Grill the skewers for about 18-22 minutes, turning every 4-5 minutes.
