- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 finely diced onion and cook until softened and translucent, about 5 minutes. Stir in 3 minced garlic cloves, and continue cooking for another minute until fragrant.
- Mix in 2 tablespoons of tomato paste and a pinch of red pepper flakes, cooking for 1 minute to deepen the color and flavors.
- Pour in 1 cup of low-sodium vegetable broth along with 1 can of diced fire-roasted tomatoes, drained white beans, ½ cup of sliced Kalamata olives, and 2 tablespoons of capers. Stir the mixture well and let it simmer on low heat for 10-15 minutes.
- Remove from heat and stir in ¼ cup of grated Parmesan cheese or vegan Parmesan if preferred, along with a handful of chopped parsley and the juice of half a lemon.
