For the Beans
  • 2 tablespoons Olive Oil Feel free to swap with vegetable oil if needed.
  • 1 medium Onion Finely diced, yellow or white works best.
  • 3 cloves Garlic Minced.
  • 2 tablespoons Tomato Paste
  • 1 pinch Red Pepper Flakes Adjust to taste.
  • 1 can Diced Fire-Roasted Tomatoes Canned varieties are convenient.
  • 1 cup Low-Sodium Broth Vegetable broth to keep it vegan.
  • 1 can White Beans Navy, Cannellini, or Great Northern, drained and rinsed.
  • ½ cup Kalamata Olives Sliced, substitute with green olives if desired.
  • 2 tablespoons Capers Optional.
  • ¼ cup Parsley Chopped, or substitute with fresh basil.
  • ½ each Lemon Juice or Red Wine Vinegar Fresh juice is best.
  • ¼ cup Parmesan Cheese or Vegan Parmesan Omit for fully vegan.
For Serving
  • 1 loaf Garlic Bread Homemade or store-bought.

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 finely diced onion and cook until softened and translucent, about 5 minutes. Stir in 3 minced garlic cloves, and continue cooking for another minute until fragrant.
  2. Mix in 2 tablespoons of tomato paste and a pinch of red pepper flakes, cooking for 1 minute to deepen the color and flavors.
  3. Pour in 1 cup of low-sodium vegetable broth along with 1 can of diced fire-roasted tomatoes, drained white beans, ½ cup of sliced Kalamata olives, and 2 tablespoons of capers. Stir the mixture well and let it simmer on low heat for 10-15 minutes.
  4. Remove from heat and stir in ¼ cup of grated Parmesan cheese or vegan Parmesan if preferred, along with a handful of chopped parsley and the juice of half a lemon.
  5. Spoon the creamy Puttanesca Beans into bowls and serve warm with crispy garlic bread.
