Ingredients
  

Scone Base
  • 2 cups all-purpose flour
  • 1/4 cup sugar plus extra for topping
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter very cold, cubed
Flavoring
  • 1 teaspoon cinnamon adjust to taste
  • 3 medium fresh peaches peeled and diced
Binding
  • 1/2 cup heavy cream can substitute with milk

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C) and position the oven rack in the middle.
  2. Pulse together the flour, sugar, baking powder, cinnamon, and salt in a food processor.
  3. Add cold cubed butter and pulse until the mixture resembles coarse cornmeal.
  4. Transfer mixture to a bowl and fold in diced peaches and heavy cream until just combined.
  5. Knead the dough gently on a floured surface and shape it into a slab about 1½–2 inches thick.
  6. Cut out scones using a round cutter and place them on a lined baking sheet.
  7. Sprinkle extra sugar on top of each scone if desired.
  8. Chill the scones in the refrigerator for 30 minutes.
  9. Bake the scones for 13-15 minutes until lightly golden brown.
  10. Let the scones cool on a wire rack for about 10 minutes before serving.
