  1. Start by gathering all your ingredients. Chop chicken into bite-sized pieces, slice sun-dried tomatoes, mince garlic, and rinse spinach.
  2. Heat a large skillet over medium heat and add olive oil. Season chicken with salt and pepper and cook for 6-7 minutes on each side until golden brown.
  3. In the same skillet, add orzo and toast for 2-3 minutes. Then pour in chicken broth, bring to a boil, reduce heat, and simmer for 10-12 minutes until tender.
