  • 12 oz Pasta gluten-free pasta if needed
For the Salmon
  • 4 fillets Fresh Salmon can substitute with cod or chicken
  • To taste Salt
  • To taste Pepper
  • 1/2 cup Flour or cornstarch for gluten-free
For the Sauce
  • 2 tbsp Olive Oil or vegetable oil
  • 1 tbsp Butter or plant-based butter for dairy-free
  • 1 cup Chicken Broth or dry white wine
  • 2 tbsp Lemon Juice fresh lemon juice recommended
  • 2 cloves Garlic minced, can substitute garlic powder
  • 1 cup Heavy Cream or coconut cream for dairy-free
  • 1/4 cup Chopped Fresh Dill reduce quantity if using dried
For the Garnish
  • 2 tbsp Fresh Parsley chopped
  • 1/4 cup Parmesan Cheese or nutritional yeast for vegan

Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook to package directions until al dente, about 8-10 minutes. Drain and set aside, reserving some pasta water if needed.
  2. Prepare the Salmon: Season salmon fillets with salt and pepper and dredge in flour, shaking off excess.
  3. Sauté the Salmon: Heat olive oil and butter in a skillet over medium-high heat. Cook salmon for 2-3 minutes on one side until golden, flip and cook for another 2-3 minutes.
  4. Make the Sauce Base: In the same skillet, add chicken broth, lemon juice, and garlic. Simmer for 30 seconds, scraping the skillet.
  5. Create the Creamy Sauce: Lower heat, stir in heavy cream and fresh dill, simmer for 2-3 minutes until thickened. Add salmon back into the sauce, breaking it into pieces.
  6. Combine Pasta and Sauce: Add drained pasta to the skillet and toss to coat, adding reserved pasta water if needed.
  7. Serve and Garnish: Transfer to plates and garnish with parsley and Parmesan cheese. Enjoy!
