For the Lemon Cream Layer
  • 1 cup Raw Cashews Soak them for smooth blending or use silken tofu as a substitute.
  • 1/4 cup Lemon Juice Store-bought lemon juice can be used.
  • 1/4 tsp Turmeric Optional for coloring.
  • 1 tsp Lemon Extract Can be replaced with additional lemon juice.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and a pinch of sea salt until well blended. The mixture should be smooth and creamy with no clumps.
  2. Cover the bowl with plastic wrap and refrigerate for at least 3 hours or overnight. Stir after the first 15 minutes to prevent clumping.
  3. Soak the raw cashews in boiling water for 1 hour to soften.
  4. Blend the soaked cashews with additional oat milk, maple syrup, lemon juice, a pinch of turmeric, and lemon extract until smooth and creamy.
  5. Divide the chia pudding evenly among small jars, creating a layer at the bottom.
  6. Pour the lemon cream mixture over the chia pudding layer in each jar, covering it completely.
  7. Refrigerate the assembled jars for another 3 hours for the layers to set.
  8. Top with fresh fruit before serving, if desired.
